How to cook pasta

The method is the same for every dried shape. Boil a litre of water per 100 g of pasta. Salt it at 10 g per litre when it boils. Add the pasta, stir for the first minute, and start the clock when the water comes back to the boil. Bite a piece one minute before the box time. Save a cup of the water. Drain, and finish the pasta in the pan with the sauce.

The time is the only thing that changes. Pick a shape below for its brand time, its al dente time, and a timer that counts it down.
