Name. From sedano, celery. The ridged curved tube looks like a stalk. Older name: zanne d'elefante, elephant tusks.

How to cook sedani: 10 to 12 minutes, with a timer

What it is

Sedani is a narrow ridged tube with a gentle curve, like a piece of celery stalk, cut straight at the ends. It is smaller than rigatoni and rounder than penne, with a curve that helps it hold sauce.

Sedanini is the smaller grade, used in soups and children's dishes.

How to cook sedani

10 to 12 minutes in boiling salted water. Take the shorter time for al dente, the longer time for fully cooked.

The steps

  1. Bring 4 L of water to a full boil in a tall pot. Add 40 g of salt when it boils.
  2. Add the sedani. Stir for the first minute so nothing sticks. Start the timer when the water returns to the boil.
  3. Bite a piece at 9 minutes. A hairline of white at the centre is al dente.
  4. Scoop out a cup of the cooking water. Drain, or lift the pasta straight into the pan.
  5. Toss with the sauce over the heat for a minute. Add cooking water a splash at a time until it clings.

How it holds sauce

Ridged and curved, so it grips smooth and medium sauces: tomato, a light ragu, cream with vegetables. Too narrow for big pieces.
