What it is

Conchiglioni are jumbo shells, five or six centimetres long, made for stuffing. They are boiled, filled with ricotta and spinach or with meat, and baked under tomato or bechamel.

In the United States they are stuffed shells; in Italy conchiglioni ripieni.

How to cook conchiglioni

13 to 16 minutes in boiling salted water. Al dente at 10 minutes, fully cooked at 16.

The steps

  1. Bring 4 L of water to a full boil in a tall pot. Add 40 g of salt when it boils.
  2. Add the conchiglioni. Stir for the first minute so nothing sticks. Start the timer when the water returns to the boil.
  3. Bite a piece at 9 minutes. A hairline of white at the centre is al dente.
  4. Scoop out a cup of the cooking water. Drain, or lift the pasta straight into the pan.
  5. Toss with the sauce over the heat for a minute. Add cooking water a splash at a time until it clings.

A container for a filling. The sauce goes over the top and must be smooth enough to bake in: tomato, bechamel, or both.
