Name. Penne with the diminutive -ette. Little quills. Pennettine are smaller still.
What it is
Pennette is a small penne, about three and a half centimetres long and under a centimetre wide, and pennettine drops another size. They keep the diagonal cut and the ridges and cook a minute or two faster.
They are the tube for pasta salads, for children's plates, and for thick soups where a full penne would be clumsy.
How to cook pennette
8 to 11 minutes in boiling salted water. Al dente at 7 minutes, fully cooked at 11.

The steps
- Bring 4 L of water to a full boil in a tall pot. Add 40 g of salt when it boils.
- Add the pennette. Stir for the first minute so nothing sticks. Start the timer when the water returns to the boil.
- Bite a piece at 6 minutes. A hairline of white at the centre is al dente.
- Scoop out a cup of the cooking water. Drain, or lift the pasta straight into the pan.
- Toss with the sauce over the heat for a minute. Add cooking water a splash at a time until it clings.

How it holds sauce
Small tubes take smooth and light sauces: tomato, a simple cream, pesto, an oil dressing for a cold salad. Chunks of meat or vegetable outsize the pasta.
