How to cook farfalle: 10 to 12 minutes, with a timer

What it is

Farfalle are rectangles of pasta, often with fluted edges, pinched in the middle so they open like a bow tie or a butterfly. The shape is from Lombardy and Emilia, where they were cut from egg sheet at home. Dried farfalle is semolina.

The pinch is the problem. The centre stays firm while the wings soften, so farfalle is never quite evenly cooked. Farfalline is the small grade for soup.

How to cook farfalle

10 to 12 minutes in boiling salted water. Al dente at 11 minutes, fully cooked at 12.

The steps

  1. Bring 4 L of water to a full boil in a tall pot. Add 40 g of salt when it boils.
  2. Add the farfalle. Stir for the first minute so nothing sticks. Start the timer when the water returns to the boil.
  3. Bite a piece at 10 minutes. A hairline of white at the centre is al dente.
  4. Scoop out a cup of the cooking water. Drain, or lift the pasta straight into the pan.
  5. Toss with the sauce over the heat for a minute. Add cooking water a splash at a time until it clings.

How it holds sauce

The wings are flat and the pinch is dense, so farfalle does best with sauces that coat rather than fill: cream with peas and salmon, a light tomato, pesto, a cold dressing. Chunky sauces fall off the wings.
