How to cook tonnarelli: 3 to 5 minutes, with a timer

What it is

Tonnarelli is a square-section egg strand, cut by pressing a thick sheet through the wires of a chitarra. In Abruzzo the same pasta is spaghetti alla chitarra or maccheroni alla chitarra. Rome adopted it and made it the fresh shape for cacio e pepe.

The square section and the egg give it a rough, porous face and a good chew, so it takes a heavy dressing without going soft.

How to cook tonnarelli

3 to 5 minutes in boiling salted water. Al dente at 11 minutes, fully cooked at 5.

The steps

  1. Bring 4 L of water to a full boil in a tall pot. Add 40 g of salt when it boils.
  2. Add the tonnarelli. Stir for the first minute so nothing sticks. Start the timer when the water returns to the boil.
  3. Fresh pasta has no dry core. It is done when it is tender, not when it resists.
  4. Scoop out a cup of the cooking water. Drain, or lift the pasta straight into the pan.
  5. Toss with the sauce over the heat for a minute. Add cooking water a splash at a time until it clings.

How it holds sauce

A porous square strand grips a cheese emulsion like nothing else, which is why Roman trattorias serve tonnarelli cacio e pepe. It also takes lamb ragu in Abruzzo and a light seafood sauce on the coast.
