Name. From penna, a quill pen. The diagonal cut is the nib. A Genoese pasta maker patented the cutting machine in 1865.

How to cook penne: 10 to 12 minutes, with a timer

What it is

Penne is a medium tube cut on the bias so both ends come to a point, about five centimetres long and a centimetre across. Ridged penne, penne rigate, is the default on most shelves; smooth penne lisce is the older form and still preferred in parts of the north.

The diagonal cut came out of Liguria in the 1860s, when Giovanni Battista Capurro of San Martino d'Albaro patented a machine that cut the tubes without crushing them. Penne all'arrabbiata, with tomato and chili, is the dish most people learn it from.

How to cook penne

10 to 12 minutes in boiling salted water. Al dente at 10 minutes, fully cooked at 12.

The steps

  1. Bring 4 L of water to a full boil in a tall pot. Add 40 g of salt when it boils.
  2. Add the penne. Stir for the first minute so nothing sticks. Start the timer when the water returns to the boil.
  3. Bite a piece at 9 minutes. A hairline of white at the centre is al dente.
  4. Scoop out a cup of the cooking water. Drain, or lift the pasta straight into the pan.
  5. Toss with the sauce over the heat for a minute. Add cooking water a splash at a time until it clings.

How it holds sauce

The bore carries sauce inside and the ridges hold it outside, so penne takes any sauce with body: arrabbiata, vodka sauce, a vegetable ragu, cream with peas and ham, and the oven. The pointed ends spear rather than scoop, so very chunky sauces sit better in rigatoni.
