What it is

Strozzapreti are strips of dough rolled between the palms into a loose, uneven twist, five to seven centimetres long. The Romagna version is flour and water, sometimes with an egg; Tuscany and Umbria use the same name for other shapes, including a spinach dumpling.

The dried version is a tidy machine twist. The hand-made one is ragged and better.

How to cook strozzapreti

8 to 11 minutes in boiling salted water. Take the shorter time for al dente, the longer time for fully cooked.

The steps

  1. Bring 4 L of water to a full boil in a tall pot. Add 40 g of salt when it boils.
  2. Add the strozzapreti. Stir for the first minute so nothing sticks. Start the timer when the water returns to the boil.
  3. Fresh pasta has no dry core. It is done when it is tender, not when it resists.
  4. Scoop out a cup of the cooking water. Drain, or lift the pasta straight into the pan.
  5. Toss with the sauce over the heat for a minute. Add cooking water a splash at a time until it clings.

How it holds sauce

Rough, twisted, and long enough to hold, so it takes a ragu, a sausage sauce, cream with mushrooms, and a pesto. The twist catches pieces.
