Name. From capello, hair, with the diminutive -ini. Fine hairs. Capelli d'angelo, angel hair, is the finest grade.

How to cook capellini: 2 to 4 minutes, with a timer

What it is

Capellini is the thinnest dried strand in regular production, under a millimetre across, and it cooks in two to four minutes. Angel hair, capelli d'angelo, is the same idea a shade finer, and both are often sold coiled into nests so the fragile strands survive the box.

It overcooks in the time it takes to drain the pot, so it is a shape for people who stand at the stove. Traditionally it went into broth or was served with the lightest oil or butter dressing.

How to cook capellini

2 to 4 minutes in boiling salted water. Take the shorter time for al dente, the longer time for fully cooked.

The steps

  1. Bring 4 L of water to a full boil in a tall pot. Add 40 g of salt when it boils.
  2. Add the capellini. Stir for the first minute so nothing sticks. Start the timer when the water returns to the boil.
  3. Bite a piece at 1 minute. A hairline of white at the centre is al dente.
  4. Scoop out a cup of the cooking water. Drain, or lift the pasta straight into the pan.
  5. Toss with the sauce over the heat for a minute. Add cooking water a splash at a time until it clings.

How it holds sauce

There is almost no mass to carry sauce, so the sauce must be nearly weightless: butter, lemon, a splash of oil, a raw tomato, a little broth. Anything with body clumps the strands into a mat.
