Flat pasta shapes: ribbons and sheets

Flat pasta is rolled, then cut. Width is the whole story: tagliolini are the narrowest, pappardelle the widest, and a lasagne sheet is not cut at all. Egg dough is usual, because a rolled sheet needs the strength.
