What it is
Quadrefiore is a dried short shape with a square outline and rippled, scored edges that run the full length of each piece. The Mammarella brand, owned by Francis Ford Coppola's company, makes it from durum semolina and water. It uses antique bronze dies and dries the pasta on wooden racks. The rugged surface holds sauce. The pieces are dense and need a longer boil than most short cuts.
No fetched source names an Italian region for the shape. The Wikipedia list of pasta records it without an origin, and no Italian brand catalogue found here carries the cut. The deep ridges suit thick sauces such as a meat ragù or a chunky tomato sauce. The sauce settles into the channels between the ridges.
