Scialatielli

Thick and rough with a cheese-and-herb dough, it stands up to shellfish and holds a light seafood sauce in its uneven surface. It is too heavy for a plain oil sauce and too short for twirling.

Trofie

A tight rough twist made for pesto. The raw basil paste clings to the spiral, and the potato and beans cooked in the same water round the dish out. A walnut sauce or a light tomato also works.
