Busiate

A long loose coil with a bore, so it holds a thick pesto in every turn: trapanese, pistachio, or a Norma-style eggplant sauce. It also takes seafood.

Trofie

A tight rough twist made for pesto. The raw basil paste clings to the spiral, and the potato and beans cooked in the same water round the dish out. A walnut sauce or a light tomato also works.

Can you swap them?

Not a natural swap. They share 1 sauce: Pomodoro.

Only busiate: Pesto alla trapanese, Norma, Frutti di mare.

Only trofie: Pesto alla genovese, Walnut sauce, Vegetable ragu.
